CleaNutButter Cups

Peanut butter and chocolate have to be one of the best combinations on this planet. I just love the mix of salty and sweet together. I have always wanted to try making my own peanut butter cups and have previously made peanut butter squares but they had copious amounts of icing sugar, and all sorts of other 'bad' things! So this time I tried my hand at making a 'clean' version and with only four ingredients, they could not have been easier. And with no cooking, apart from using a microwave, they are super quick and easy to make!


CleaNutButter Cups 
(makes 6)


Ingredients: 
40g coconut oil, melted
40g PB2 (powdered peanut butter, available in supplement stores such as BodyFirst Nutrition in Clontarf or UN Sports Nutrition in Dundrum and Dun Laoghaire and online)
25g raw cacao powder
Stevia (optional)


Method:
1. Melt coconut oil in microwave, then stir in raw cacao powder and add stevia to taste.

2. Divide the chocolate mixture in half and spoon half the mixture into 6 bun cases. Put in the fridge while you make the peanut butter mixture.

3. To make the peanut butter mixture mix the PB2 with water a little at a time until you have a thick consistency that can be rolled into balls. Add stevia to taste if you like.

Note: If you don't have pb2, natural peanut butter will do, but you may need to add some almond flour to make it slightly drier so it can be rolled into balls.

4. Roll the peanut butter into 6 even sized balls and then flatten them out and place them on top of the first layer of chocolate.

5. Pour the remaining chocolate mixture over the peanut butter layer and then refrigerate. Keep refrigerated for optimal texture.




I decided to do a comparison between the 'real deal' peanut butter cups and my 'clean' version and while the calorie count is quite similar with less than 10 calories difference, the sugar content is almost non-existent in my 'clean' version while it is over 10g in the real version.
