
Ingredients
200g pecans
1tbsp cinnamon (feel free to add more or less depending on your taste)
1-2tbsp maple syrup (depending on your taste)
Method
1. Preheat oven to 160C. Line a baking sheet with greaseproof paper.
2. Add the Pecans to the baking sheet and place in the oven for about 10 minutes, just until you can smell them - be careful, they can go from nicely toasted to burnt very quickly.
3. Place the toasted pecans in a food processor and process until a paste starts to form, you will need to stop the processor every few minutes to scrape down the sides. This can take anywhere from 10-15 minutes depending on the power of your food processor.
4. Next add the cinnamon and maple syrup and process again just until mixed through.
5. Transfer to a clean and preferably sterilised jar (fresh out of a hot dishwasher will do, otherwise place jar and lid not touching on a baking sheet in the oven while the nuts are toasting about 10 minutes)
6. This will keep in the fridge for 2-3 weeks after making.
7. Enjoy with cut up apple slices, on toast, or even stir it into porridge.
