This is my version of healthy chocolate truffles, and if I hadn't told you they were healthy before you tasted them there is no way you would believe me! I have to say I think these may be my best invention yet!
Ingredients:
Makes about 15 chocolate truffles
150g pitted dates
100g almond butter with dark chocolate (I used Keen, available in most health food stores)
75g dark chocolate
Note: If you don't have almond butter with dark chocolate you can use regular almond butter (or any nut butter you fancy), just add in about 1 tbsp of cacao powder for the rich chocolate flavour.
Method:
1. Soak the dates in boiling water for about 10 minutes to allow them to soften and plump up. Do not soak for more than 10 minutes or else the mix will be too wet and won't form into a ball later.
2. Drain the water off the dates and put them in a blender or food processor with the almond butter. Blend until it forms together into a dough consistency.
3. Divide the dough into small balls, you can really make whatever sized truffles you want, big ones ,small ones or even a variety of sizes. I got 15 standard sized chocolates out of mine. Refrigerate the balls for about 30 minutes before covering in chocolate.
4. Melt the chocolate in the microwave or over a bain marie (bowl over simmering pot of water). If you are melting it in the microwave be careful and make sure to check it at least every 30 seconds and stir it to make sure it doesn't seize on you. When the chocolate is fully melted, let it cool for a few minutes before you begin covering the truffles.
5. Dip each ball in the bowl of melted chocolate and lift out with a fork to allow excess chocolate to drip off. Place the chocolates onto greaseproof or baking paper on a plate or tray. (I didn't use greaseproof paper, and they ended up getting a bit stuck to the plate so I would definitely recommend using it)
6. Refrigerate for about an hour to let them harden (if you can wait that long).
