Caramel Millionaire Squares

Ingredients:

Base
200g dates
135g raw cashews
120g ground almonds

Caramel
150g dates
140g Nuts N More Toffee Crunch Peanut Butter
2 tbsp honey or agave syrup

Chocolate
150g dark chocolate (I used 74% cocoa solids)


Method:

1. Soak the 2 sets of dates separately in bowls of hot water for about 10-15 minutes (it is fine to leave the dates for the caramel for longer).

2. Blend all the base ingredients together in a food processor, until it forms into a ball.

3. Spread the base into a greaseproof lined square pan. I found that if i rubbed a small amount of coconut oil on my hands before trying to spread it out in the pan it made it much easier as the mixture didn't stick to my hands. Place in the fridge while you make the caramel.

4. Blend all the caramel ingredients together in a food processor until a smooth paste forms. Spread over the base and place back in the fridge.



5. Melt the dark chocolate over a bain marie or in the microwave. Pour over the caramel and spread it out evenly so it covers the entire pan. Place it back in the fridge for at least 1 hour to allow the chocolate to harden.


6. Once the chocolate has hardened take the pan out of the fridge and leave out for about 15 minutes before trying to cut it so the chocolate doesn't crack. Running a sharp knife under very hot water for a minute or so before trying to cut into squares will also help to prevent cracking.

7. I cut mine into 16 squares, but I could have cut them smaller as they are quite rich and so a small piece is really all you need.


Notes:
If you can't get Nuts N More Toffee Crunch Peanut Butter, you can use any kind of nut butter such as almond, cashew, or hazelnut butter. This also goes for if you want the recipe to be dairy free and paleo because the Nuts N More PB has added whey protein. 

Also if you want the recipe to be vegan use agave syrup rather than honey and use a regular nut butter. 

The overall review from my family and work colleagues was that they are really delicious. I brought the majority of them into work with me and came home with an empty tupperware box so I guess that means they enjoyed them!
