I finally got to test out our new ice cream machine and let me tell you it is quite amazing! We had some delicious ripe peaches so I thought I would try making a peach frozen yoghurt. Peaches are one of my favourite summer fruits.
Before you begin, make sure that your ice cream machine bowl has been chilled in the freezer for at least 12 hours (or however long your machine's instructions say). This recipe does require some planning ahead but all in all the time it takes to make is about 30 minutes of actual hands on work.
This recipe can easily be halved, and I think in future I would probably half it.
Ingredients:
Serves 8 people
500g greek yoghurt
5 ripe peaches
1/4 cup agave syrup (or honey)
Method:
1. Place the peaches in a bowl of boiling water and leave for about 5 minutes, this will help to remove the skins very easily.
2. Peel the skins of the peaches, the skin should just slide right off but you may need to use a small paring knife to get some stubborn bits off.
3. Chop the peaches, no need to make them all the same size as you will be pureeing them anyway. Just try to get as much of the peach away from the stone as possible.
4. Place the peaches in a blender a blitz until a puree is formed, then add the greek yoghurt and the agave syrup and blitz again.
5. Pour the mixture into a jug or bowl and refrigerate for at least 4 hours to make sure it is nicely chilled before it goes in the ice cream machine.
6. After you have chilled your mixture and you are ready to turn it into fro-yo, get all the bits for your machine out and the mixture out of the fridge before removing the bowl from the freezer as the colder it is the better.
7. My ice cream machine can only hold about 600ml of liquid at a time so I had to make my fro-yo in two batches. For the first batch I turned on the ice cream machine and started pouring the mixture into the machine and I just let it run for about 20 minutes. The time can vary depending on your ice-cream machine but you will know when its done as it will look like frozen yoghurt!
8. Place the fro-yo into a resealable box and put it in the freezer until you are ready to enjoy it. But bear in mind that since this mixture is fat-free that it will freeze quite solid so take it out of the freezer about 20 minutes before you want to eat it to allow it to soften a little. Another trick I read was to keep it in the door of your freezer as it's not quite as cold as the rest of the freezer so it will soften up much quicker.
